These cookies are extremely simple to make and wonderfully soft in the middle. The dough is left to harden in the fridge for a short while, and the raw cookie dough is rolled in icing sugar, giving the cookies a crinkled look after baking.
The below recipe makes around 12 cookies.
Ingredients
30gr cocoa
95gr sugar
2tbsp oil
1 egg
90gr flour
1/2tsp baking powder
1/2tsp vanilla paste (or 1tsp vanilla essence)
5tsp cream
150gr icing sugar
Method
1. In a small bowl mis the cocoa, sugar and oil until combined. Add in the egg.
2. Add half the flour and 2 tablespoons of the cream, then mix. Add in the rest of the flour and cream - adding these in slowly means the dough will be easier to mix.
3. Cover the dough and place in the fridge for 1-3 hours.
4. Once chilled, preheat the oven to 180 degrees celsius and line a baking dish with baking paper.
5. Portion out the dough using around a tablespoon per portion, and roll into a ball. Roll in the icing sugar and place on the baking sheet, ensuring there is plenty of space between each ball, allowing for them to spread.
6. Bake for around 10-12 minutes.
