Rocky road brings together all my favourite ingredients, and as an additional pro, can be made in no time at all. It's not pricey to make and is destined to be a crowd favourite - who doesn't like chocolate and marshmallows? You can also completely change it up depending on your mood or personal preferences - you can change up the biscuit you use, whether you want to add the dried fruit or change it up or not. Really, it's an endless array of possibilities.
I personally like a thick slab of it, so I used an 8.5 x 8.5 inch tray. But you can go bigger if you'd rather have a thinner slice, or obviously smaller if you want your rocky road to be proper chonky.
Ingredients
250gr dark chocolate
120gr unsalted butter
2tbsp golden syrup
100gr digestive biscuits (or biscuit of choice)
100gr mini marshmallows
50gr nuts (roughly chopped)
50gr dried cranberries (optional / can be switched out)
Pinch of salt
Method
1. In a medium saucepan over medium low heat, add the unsalted butter and dark chocolate. Allow to melt completely, stirring occasionally to ensure the bottom doesn't burn. Add in the golden syrup.
2. Chop your digestive biscuits roughly. I first cut them in quarters, more or less, then went for a few more rough chops just to break them down. Add into a large bowl.
3. Add the marshmallows, nuts, and dried cranberries. Pour most of the chocolate mixture into the bowl, leaving around 4-5 tablespoons to spare. Mix until everything is covered in the chocolate.
4. Prep your dish, lining it with parchment paper. Pour in the rocky road mixture, flattening with the back of an offset spatula. Pour the leftover chocolate on top and smoothen out. If you have any of the dry bits to spare, sprinkle on top and press down.
5. Allow to chill in the fridge for around an hour and a half to two hours. Cut into squares using a sharp knife.
