Classic Tiramisu

Tiramisu is one of my ultimate favourite desserts. It's so simple to make, and can be whipped up in just 20 minutes and left in the fridge overnight, making it perfect for dinner parties. It also travels quite well, so would be great for a potluck!


This recipe will fill a 27cm x 40cm dish.

 

Ingredients

4 egg yolks

100gr white sugar

2 tbsp coffee liqueur

60ml double cream

1/2 tspn vanilla paste (or 1 tspn vanilla essence)

500gr mascarpone

24-30 ladyfingers

2 cups freshly brewed coffee

4 tbsp coffee liqueur

2 tbsp cocoa powder


Method

1. In a large bowl, whisk the egg yolks, sugar, coffee liqueur, and double cream until around doubled in size.


2. Add the mascarpone to the mixture and whisk for around 3-5 minutes. Set aside.

3. Dip the ladyfingers into the freshly brewed coffee for just a second at a time - do not let them sit in the coffee, as they'll fall apart. Set them side by side in the dish, until you fill the bottom layer.


4. Once the bottom layer has been covered in coffee dipped ladyfingers, spread around half the mascarpone on top until a centimetre thick. Repeat the process, placing a layer of coffee dipped ladyfingers on top of the mascarpone, and then once again covering with the rest of the mascarpone. Smooth the top layer over as much as possible.

5. Using a small sieve, sprinkle some cocoa powder on top to create a smooth layer of chocolate.

6. Cover the tiramisu in cling film and place in the fridge for at least 4 hours, but ideally, overnight. Serve cold.
