This is such a comforting meal, and so easy to make. It uses really humble ingredients, which is an added bonus. It does require some time and patience, as it requires caramelising a lot of onions, but it is so worth the time.
The below recipe will feed around 4 people.
Ingredients
6 white onions
4 cloves garlic
150ml dry white wine
75gr vegan butter
2tbsp brown sugar
2tbsp bouillon powder
2 sprigs fresh thyme
Salt and pepper
Parsley
Method
1. Peel the onions and chop in half, with the root in tact. Slice thinly into half moons. Set aside.
2. Drizzle some olive oil into a large pot and add half the butter. Add all the onions and stir occasionally, making sure not to burn the onions, on a medium high heat. Add the brown sugar to help caramelise the onions quicker. If you're worried about sticking, add around a tablespoon or two of water.
3. Once you've been cooking off the onions for around 15-20 minutes, add the garlic and thyme. Add the remaining butter and keep stirring until the onions are golden brown and soft throughout.
4. Add the white wine and deglaze the bottom of the pot. Cover the onions with water and add the bouillon powder, salt, and pepper. Simmer for around 30-40 minutes.
5. Serve hot with crusty and cheesy sourdough bread and top with fresh parsley!
