Plum and Apple Cobbler

I love baking with fruit - and autumn is such a perfect time for it too. Recipes can be so simple, with the fruit flavours really carrying the dish. This recipe makes use of seasonal apples along with plums (less so in season currently, I'm afraid). First cooked on the stove with lots of spices, the fruit is then topped with a cake like topping. My recommendation? Serve with whipped cream or ice cream for a truly perfect dessert.

 

Ingredients

Base

400gr apples, cored

400gr plums

110gr butter

1tsp cinnamon

1tsp vanilla paste

Zest and juice of 1 lemon

1/2tsp ground ginger

1/2tsp ground nutmeg

1tbsp cornstarch

6tbsp cold water


Topping

280gr flour

140gr butter

140gr sugar

1/2tsp cinnamon

1 egg

1tbsp baking powder

50gr cream

50gr milk


Method

1. Chop the apples and plums into small cubes and place into a medium saucepan over medium heat. Add the butter, cinnamon, vanilla, ginger, and nutmeg along with the zest and juice of a lemon. Cook for around 5-10 minutes, or until the fruit has softened.


2. Mix the cornstarch and water in a small bowl and add to the fruit mixture. Stir until the mixture thickens then take off the hob. Pour the fruit into your desired dish.

3. Preheat the oven to 180 degrees celsius. In a large bowl rub the flour and butter together until the mixture looks like wet sand. Add the sugar and egg, along with the cinnamon, baking powder, milk, and cream. Mix until a very shaggy and soft dough forms (think more a hybrid dough/batter).


4. Form rough balls with the dough and flatten in the palm of your hands. Place on top of the fruit and repeat until all the dough has been used up. Leave a few spaces between the discs of dough. Sprinkle with brown sugar and bake for 35-45 minutes, or until golden brown.

5. Serve piping hot with a side of ice cream or cream!
