Tuna and Sweet Potato Patties

These patties are a perfect mix of tuna, sweet potato, and olives. I find them to be great served on top of a salad to mix things up a bit, or served with a side of baked veg. They're quick to make, and are an easy way to food prep for the week as they can be made in batches.


The below recipe makes around 16 patties, serving between 4-5 people.

 

Ingredients

700gr sweet potato

White onion

5 cloves garlic

15 whole olives / 5 tbsp chopped olives

1 tspn capers

1 tspn tomato paste

1/2 tspn chilli flakes

2 cans tuna (145gr can)

2 eggs

Olive oil

Salt and pepper, to taste


Method

1. Peel and chop the sweet potatoes into large chunks. Place in a large pot and bring to a boil until soft. Drain and mash. Preheat the oven to 180 degrees celsius.

2. Chop the onion and garlic finely and add to the sweet potatoes. Shop the olives and capers finely, and add to the mixture along with the tomato paste and chilli flakes.


3. Drain the tuna and add to the sweet potato mixture. Mix to combine, adding a drizzle of olive oil and salt and pepper to taste.


4. Add the eggs to the mixture to bind. Mix until well incorporated.

5. Line a baking sheet with baking paper. Using around two tablespoons of the mixture each time, form rough balls and place on the baking sheet. Alternatively, you can also use an ice cream scoop to portion out the mixture.

6. Place the patties in the oven for around 20-30 minutes, or until just golden. Serve warm.
