Watermelon Salad

Spring is in full swing, with summer right round the corner, which can only mean one thing: barbecue season is well underway. I think the mark of a great barbecue is really fun sides, and this watermelon salad is just that! Packed full of fresh ingredients, this salad is bound to be the hit of any summer meal.


The below salad serves around 6-8 people as a side.

 

Ingredients

960gr watermelon

390gr cucumber

2 medium avocados

1/2 a medium red onion

50ml olive oil

2 cloves garlic

1 lime, zest and juice

150gr feta

Sprig fresh basil

Sprig fresh mint

Salt and pepper, to taste


Method

1. Cut up your watermelon into cubes and place in a large serving bowl. Repeat with the cucumber and avocados.


2. Chop the onion extremely finely and add to the serving bowl. Crumble the feta and add it in.

3. In a small glass, start putting together the dressing. Crush the garlic into the oil, and add the lime zest and juice. Chop the basil and mint finely and add to the dressing. Pour the dressing over the salad and mix. Add salt and pepper to taste.


4. Set in the fridge for an hour or so and serve cold. I do not recommend preparing the salad overnight, due to the fact that both the watermelon cucumber expel quite a bit of water the longer the salad sits.
