Earlier this year I was watching Fantastic Mr Fox with my housemate, and the second the scene came up with the ginger apple biscuits, I was left with no choice but to recreate them. As a bonus, they just so happen to be the perfect autumnal biscuit.
The below recipe makes 15 biscuits.
Ingredients
310gr plain flour
1tsp ground cinnamon 1tsp ground ginger
1/2tsp ground nutmeg
95gr brown sugar
225gr butter, room temp
10gr golden syrup
15gr fresh ginger, grated 1 egg
1/2tsp vanilla paste (or 1tsp vanilla essence) 2 small red apples
Method
1. Preheat the oven to 170 degrees celsius. In a large bowl, add the flour, spices, and sugar. Stir to combine.
2. Add the butter in cubes and using your fingers, crumble the flour mixture into the butter until the mixture looks like breadcrumbs.
3. Add the golden syrup, egg, and vanilla and knead until a soft dough ball forms.
4. Cut the apples thinly into rounds. There's no need to core the apple - the apple core will soften in the oven. Set aside.
5. Line a baking sheet with wax paper. Taking around a tablespoon and a half worth of dough form a ball and then flatten. Place an apple slice on top and press down gently to secure the apple slice in place.
6. Bake for 12-17 minutes, or until the edges of the biscuits are golden brown. Allow to cool.
